Short answer: consumables sell the most often, current-tier crafted gear sells for the most, and the exact winners are different on every world. Long answer below — the seven categories that reliably move, when their demand spikes, and how to check what's hot on your server instead of trusting a static list.
"Sells best" means two different things, and you want both in view:
A 200k-gil item that sells monthly is worse than a 10k item that sells ten times a day. Every category below earns through a different mix of the two.
The most dependable sellers in the game. Raiders consume food and potions every session and restock every week after Tuesday's reset — Tuesday afternoon and evening is the market's rush hour. Current-tier HQ food and pots sell in volume all week, every week, for an entire raid tier. If you can only master one craft, Culinarian or Alchemist feeds this demand forever.
Every raid tier, the best crafted combat gear (the current ★★★ recipes) is what raiders buy to clear week one — and what alts and returning players buy for months after. Crafter and gatherer gear and tools (the ★★ sets) sell steadily too, because you need crafted gear to make crafted gear. Big margins, real crafting investment required.
Materials sell to the players doing the crafting above. Two distinct markets:
Housing demand never dies — furnishings, dyes, and exterior fixtures sell to decorators year-round, and spike when housing wards or festival items release. Some furnishings are cheap NPC buys that resell at multiples (the flipping tool lists them), others are crafted with solid margins.
Fashion moves gil. Older dungeon gear, craftable glamour sets, and dyes sell to players chasing a look. Trend-driven — a popular influencer glam can triple a piece overnight — but broad and forgiving: good-looking old gear is cheap to acquire (see duty drops) and holds value.
Collectors pay serious gil for tradeable minions, mounts, and orchestrion rolls from old raids, treasure maps, and vendors. These are classic low-velocity/high-margin items: they sell rarely but for a lot. The duty drops tool ranks which old content drops the valuable ones on your world.
Every raider melds; every new gear set re-melds. Combat materia of the current tier sells constantly — volume is best right after gear resets and new tiers. A natural byproduct of playing, and worth listing rather than hoarding.
